Baked feta with thyme, honey and Grumpy Grandma's smoked olives
Ingredients
200g piece of Greek Feta
1tspn Australian honey
2 tbs Australian extra virgin olive oil
4 - 6 cloves garlic, peeled and smashed
4 - 6 sprigs of fresh thyme
250g of Grumpy Grandma's wood smoked olives, pitted and coarsely chopped
Grated rind and juice of 1 lemon
Method
Preheat oven to 200C.
Drain fetta from brine and pat dry.
Place in a small baking dish and drizzle with olive oil and honey, add garlic and thyme sprigs and sprinkle over red chilli flakes (optional).
Bake for 20 mins then baste with the olive oil. Add olives and grated lemon rind and return to the oven for 10-15 more minutes or until melting and oozey.
Spritz over lemon juice to taste then serve with warm flatbreads or focaccia.
